Mexican tortillas

Ingredients
500 g
white bread flour
5 ml
baking powder
2 ml
salt
60 ml
butter
250 ml
warm water
Method:
Mix together flour, baking powder and salt. Add butter and rub in with your fingertips until it resembles coarse breadcrumbs Add water and mix until well combined. Turn on to a floured surface and knead for 2 minutes, until dough is smooth.
Divide into 12 pieces and roll each into a ball. Place on a floured baking tray and cover with a damp cloth. Leave to rest for 1 hour.
Roll balls out on a lightly floured surface to form very thin circles. Heat a heavy-based frying pan over high heat arid place 1 tortilla in the pan. You should see signs of rising on the surface within 2 seconds. If you don't, the pan isn't hot enough.
Cook for 4-6 seconds, then turn over and cook for another 3 seconds. Remove from the pan and cover with a tea towel. Cook remaining tortillas, keeping the pile well wrapped until all are cooked. Serve immediately with a filling of chilli con carne, refried beans or spicy chicken, topped with grated cheese, guacamole and sour cream. Makes 12.
