Sesame lavash

Preparation time: 35 min + rising time

Cooking time: 20 min

Ingredients
10 g instant dried yeast
810 ml white bread flour
1 ml salt
5 ml sugar
250 ml lukewarm water
40 ml olive oil
65 ml toasted sesame seeds

Method:
Mix together yeast, flour, salt and sugar in a large bowl. Add water and oil and mix to form a soft dough. Knead for 5 minutes until smooth, then place in a greased bowl and cover with a tea towel. Set aside to rise for about 1 hour until doubled in size. Knead dough lightly, then divide into 16 pieces and keep covered while working with each piece. Roll each piece out on an unfloured surface. Roll into a rectangle shape, as thin as possible. Transfer to an ungreased baking tray and prick all over with a fork. Brush lightly with water, then sprinkle with sesame seeds. Repeat with remaining dough. Bake on baking trays in a preheated oven at 180 ºC for about 5-8 minutes, until golden brown and crisp. Cool completely on wire racks and store in an airtight container until ready to use. Serve with a brinjal dip, taramasalata or hummus. Makes 16.
