Best Yorkshire puddings

Ingredients
225 g
cake flour
1 ml
salt
4
large eggs, lightly beaten
300 ml
milk (or a mixture of milk and water)
120 ml
oil
Method:
Place flour and salt in a mixing bowl. Make a well in the centre of the flour and pour in the egg. Gradually whisk in milk to form a smooth batter. Leave to stand for 30 minutes.
Divide oil evenly between 8 individual Yorkshire pudding or muffin tins.
Heat oil in the oven, preheated to 200 ºC, for 2 minutes before pouring the batter into the hot oil and baking for 20 minutes. Serve immediately.
Makes 8.
