Brown bread with linseed


Cooking time: 1 hr 30 min

Ingredients
750 ml wholewheat flour
750 ml cake flour
10 g instant yeast
250 ml linseed
125 ml rolled wheat
10 ml salt
20 ml sugar
2 litre lukewarm water

Method:
Mix all the ingredients together, adding just enough water, a little at a time until the mixture resembles clotted cream. Divide the dough between three greased coffee tins (fill them three-quarters full) and leave to rise for an hour in a warm place. Meanwhile heat the oven to 180 ºC. Push the handle of a wooden spoon into the centre of the dough to knock it back slightly and place the tins in the oven. Bake for 1 hour and then for another 20-30 minutes at 150 ºC. Cool the loaves in the tins for 10 minutes before turning out carefully on a tea towel. (Do not shake the tins as the loaves will crack.) Leave to cool slightly before serving. Makes three small loaves.
