Mushroom Sushi
Ingredients
30 ml
dried red beans or any other small red beans soaked in water
30 ml
fresh or frozen peas
0.75
carrot, diced
30 ml
sesame seeds, lightly toasted
500 ml
cooked sushi rice (see recipe on the left)
90 ml
mirin (sweet rice wine) or sweet sherry diluted with water
60 ml
soy sauce
30 ml
sake (rice wine, optional)
60 ml
sugar

fairly large button mushrooms, stems removed
soy sauce to serve
Method:
Spoon a little of the rice mixture, about the size of a ping pong ball, on a piece of cling film resting in the palm of your hand. Bring the ends of the piece of cling film together and wrap firmly around the ball of rice, ensuring it is firm and
solid. Use your other hand to apply extra
pressure.
Unwrap the cling film and place a mushroom on top of the ball of rice. Wrap tightly once more to press the mushroom into the rice and shape the ball.
Repeat the process with the remaining rice mixture and mushrooms. Serve with salad leaves and soy sauce.
