Apple cheesecake

Ingredients
200 g
crust: ginger biscuits, crushed
60 ml
melted butter

filling: apples, peeled and cored

sugar

cream

container (230 g or 250 g) cream cheese
125 ml
sugar

eggs
250 ml
sour cream
1
juice and grated rind of lemon
125 ml
topping: cake flour
60 ml
soft brown sugar
1 ml
ginger
60 ml
butter
Method:
Preheat the oven to 180° C and line a 20 cm springform tin with baking paper.
Grease the paper.
Crust: Mix the crushed biscuits and melted butter and press the mixture onto the bottom of the prepared tin.
Filling: Slice the apples into 8 mm thick slices.
Heat the apple slices, 60 ml sugar and butter in a pan over medium heat and sauté the apple slices for three to five minutes or until soft.
Add the cream and simmer for five minutes.
Set aside.
Beat the cream cheese and 125 ml sugar until smooth.
Beat in the eggs one by one until just blended.
Beat in the sour cream and lemon rind and juice.
Arrange the apple slices on top of the crust and pour over the cheese mixture.
Topping: Mix all the topping ingredients until crumbly and scatter over the filling.
Bake for 45 minutes or until the filling is just set.
Leave to cool completely then chill in the fridge for at least four hours before serving.
