Grilled sausages and sweet parsnip mash

Ingredients
30 ml
olive oil
8
pork sausages
2
leeks, washed and chopped
6
sweet potatoes, peeled and chopped
3
garlic cloves, peeled
3
parsnips, peeled and roughly chopped
5 ml
salt and freshly ground black pepper
30 ml
extra-virgin olive oil, to drizzle
Method:
Heat the oil in a frying pan and fry the sausages on all sides until golden brown. Remove from the pan. (Alternatively, grill the sausages in the oven.)
Stir-fry the leeks for about 5 minutes or until softened. To make the mash, boil sweet potatoes, garlic and parsnips together until soft. Mash with a potato masher, season and drizzle over olive oil.
Spoon mash onto warmed plates and top with sausages and leeks.
