Sticky sweet piquanté pepper relish with madumbi crisps

Ingredients
500 ml Relish: sweet piquanté peppers, chopped
4 ripe tomatoes, chopped
250 ml brown sugar
250 ml malt vinegar
12 garlic cloves, crushed
125 ml fresh grated ginger
2 star anise
8 Crisps: madumbis, peeled and sliced
30 ml sunflower oil, for frying
20 ml chilli salt, to serve

Method:
Place all the ingredients for the relish in a saucepan and bring to the boil. Simmer for 30 minutes or until the mixture turns jammy. Cool and cover until ready to eat. Heat the oil in a pan and fry the madumbis in batches. Drain on paper towel and sprinkle with chilli salt. Eat straight away with a bowl of sticky relish.
