Red onion, mango and rocket salad
Preparation time: 15 minutes
Ingredients
3
large, firm rip mangoes, peeled
2
cloves garlic, crushed
2
red onions, peeled and thinly sliced
salt and lots of milled black pepper
2
handfuls of rocket
1
large lemon, the juice
Method:
Slice the mangoes quite thickly.
Put the onions in a glass dish, salt them and let them stand for one hour. (We want the juice, so keep it and add later for lots of flavour.)
Mix the onions, rocket, mangoes, garlic, olive oil and lemon juice together.
Give the mixture a good grinding of black pepper.
Toss all the ingredients together gently with your hands.
Lick your fingers, wash your hands.
Refrigerate the salad until you are ready to eat.
