Wholewheat rotis
Ingredients
250 ml
wholewheat flour
250 ml
white flour
45 ml
ghee
Method:
Mix flour with salt and ghee.
Use enough water to form a soft dough, then allow to rest for at least one hour before rolling.
Divide dough into 8 and roll out each ball to make a circle, about 3 mm thick.
Fold each circle in half and brush with ghee, then fold in half again to form triangles.
Roll each triangle into a ball and roll out once again.
Place on a hot Tava griddle and turn every now and again until lightly freckled.
Brush remaining ghee on each side and cook until well coloured.
