Homemade tortillas
Ingredients
375 ml
cake flour
250 ml
mealie meal
pinch salt
60 ml
butter
160 ml
warm water
Method:
Combine the dry ingredients.
Rub in the butter, then gradually add the water, mixing to form a stiff dough.
Knead the dough until smooth.
Leave to rest for 30 minutes.
Divide into 8 to 12 pieces and roll out until very thin.
Cover with a damp cloth.
Heat a heavy-based non-stick pan and grease with non-stick spray.
Place one of the dough circles in the pan and cook until the edges start to curl.
Turn and cook the other side.
Repeat, stack the tortillas on top of one another, interleaving them with wax paper.
The tortillas will soften while standing.
