Balsamic roasted onions and mushrooms with deep-fried ginger
Ingredients

baby onions, peeled

large brown mushrooms, wiped clean
30 ml
olive oil
90 ml
balsamic vinegar
salt and freshly ground black pepper
1
large piece of fresh ginger, deep fried
Method:
Toss the mushrooms and onions in the olive oil and the balsamic vinegar.
Place on a baking tray and roast at 180 °C for 20-25 minutes, checking that the mushrooms have not cooked before the onions have.
Spoon onto plates and pour over the sauce and top with deep-fried ginger to serve.
