1 bag pre-washed baby spinach leaves, torn up
1 punnet strawberries, chopped in half
150gsm goats milk feta, chopped into blocks
1 sliced up mango
half a punnet of vine-ripened baby rosa tomatoes
1 100gsm peanut brittle, roughly broken up
Marinade strawberries in a mixture of balsamic vinegar and sugar for 20 minutes. Arrange spinach leaves in a bowl and scatter strawberries, goats milk feta, mango, baby Rosa tomatoes and peanut Brittle over the spinach leaves.
