pink grapefruit

watercress
olive oil
cider vinegar
salt and pepper
Peel and segment the grapefruit and place on the bottom of a serving bowl. Cube the feta and place on top of the grapefruit. Wash and dry the watercress. Whisk the olive oil and cider vinegar together to taste and season well. Just before serving, gently toss the watercress in the dressing and pile on top of the feta. - Aylena Murphy
