Crust:
250ml flour
100g butter
250ml grated cheese
cayenne pepper (2ml or to taste)
Filling:
400g cooked (or canned) tuna, salmon or smoked snoek
125ml (or less, to taste) each:
stoned ripe olives
roughly choped anchovy fillets, capers
feta cheese
250ml grated mozzarella cheese
(substitute other white cheese or even cheddar)
350ml sour cream or yoghurt (substitute 1/3 milk)
4 eggs
Crust:
Mix and press into a quiche dish, adding a little olive oil if necessary. Bake for 10 min or until just firm. Cool.
Filling:
Flake fish over crust, arrange olives, anchovies, capers and feta over fish, then cover with grated cheese. Beat cream/yoghurt and eggs lightly and pour over all. Bake at 180C for about 40 minutes and watch toward the end. Serve as a starter, or with a salad and crusty bread as a light meal. - Anita van der Spuy
