3 medium potatoes
olive/canola oil
1 onion
4 eggs

Peel potatoes and thinly slice. Salt the raw potatoes first. Fry until crispy and drain them on paper towels. Fry the onion separately and drain. Beat the eggs and mix all the ingredients together. Add extra eggs if required. Heat a non-stick pan (medium heat) with a drizzle of olive oil and add the mixture. Flip the tortilla with a plate over the pan and slide back into the pan to cook the other side. Check that it doesn't burn, and when the egg is set, its ready. - Juan Herrero
