2 eggs
3/4 cup oil
1 cup sugar
2 1/2 tsps bi-carbonate
2 cups milk
2 cups flour
2 cups bran
chopped carrots
chopped nuts (optional)
2 ripe bananas chopped
Cream together eggs, oil and sugar. Add alternatively bran, bi-carbonate, milk and flour. Lastly add the carrots, nuts and bananas and leave over night. Bake in muffin tray on 325 ? 350 for 20 minutes. The mixture can last in the fridge for 2 weeks. - Sharon Taitz
