Dimo Simatos is the head pastry chef for Lindt South Africa. His formal training started at the City and Guilds pastry course and he continued to train in chocolate work in the United States, France and Switzerland while working in a number of South African hotels. He also represented SA from 2000 until 2006, at the United States Culinary Classic Competition; in Germany at the Culinary Olympics, and in Singapore in the Culinary Challenge as part of the national pastry squad.

However, this young man of Greek heritage, has now found his dream job as the pastry chef (and scientist) at Lindt SA where he works with the finest chocolate, developing and perfecting recipes every day. He is also passing on his expertise with workshops in desserts, chocolate décor, showpiece making and chocolate praline making. The chocolate studio is the first of its kind in SA offering specialised training workshops to entry level chefs and all chocolate lovers. To find out more about the workshops please go to the chocolate studio.

Interesting.. but
I love my chocolate ey.. and I especially love the Lindt chocolate.. mmm Yum*..

These Workshops on how to create desserts and things using Lindt chocolate looks so coool.. but even though I can afford to attend this.. I must be crazy if I am going to spend that much.. I mean hello! I could buy a months supply of Lindt Chocolate.. If I was a prof Chef.. then I would so be begging my boss to send me on this course.. :) ok now im craving some chocolate.. grrr ;) - Toberin

So not fair...
I think I need to change my profession. Seriously though - very interesting item and hooray for our side. SA has produced some world class chefs but a chocolatier is something special. Tx Food24.... I'm sure chocolate's sales figures will be going up & I am going to contribute to that! - Ami

What a shining star
A shining star on the SA culinary horizon, well done Dimo and off the few skilled individuals that are willing to share their experience you are really worth every penny-flourdrum - Rene

Try to save and do the course, what an experience! - Benita

great concept
wow this looks amazing. It is about time that SA has decent workshops in chocolate work. It may look expensive but I know from experience that doing chocolate workshops overseas are much more expensive and you are using a great chocolate like Lindt. I am sure it would be a great experience - james
