1 Enhanced apple tart
Scatter just a few drops of fine, aged balsamic vinegar over an apple tart flavoured with sugar, cinnamon and some butter.
2 Fruit pie
To warm your leftover fruit pie, wrap in foil and warm 10 minutes in a 180°F oven.
3 Great dessert trick
Paint paper muffin cups with melted bittersweet chocolate; chill until firm, then peel off the paper. Fill the chocolate dessert cups with Instant Chocolate Mousse (or fresh fruit) and top with a dollop of sweetened whipped cream. Serve on a chilled dessert plate so the chocolate stays cold and the cups hold their shape.
4 Home-made desserts
If desserts are made with raw eggs, make sure that you heat the egg/milk mixture to 160°C or use pasteurised egg products.
5 No cream, low cal
Substitute evaporated skim milk for cream in frozen desserts, puddings, pie fillings, and sauces. It's especially compatible with caramel, butterscotch, and chocolate.
6 Pudding preserver
To prevent egg pudding with caramel topping from breaking, add a teaspoon of flour to the milk mixture before baking.
7 Quick coulis
Keep commercially frozen raspberries, strawberries, and blackberries in your freezer to produce fruit coulis at a moment's notice. Just thaw, puree, strain, and flavour to taste with a little lemon juice and honey.
