Make your own stock for a special sauce. Ask your butcher to bone the lamb. Retain the bones. Heat 20ml butter in a saucepan and brown the bones with an unpeeled, quartered onion and two carrots. Add a bunch of fresh herbs and 500 ml water. Simmer, uncovered, for one hour over a low heat. Strain and discard solids.
