Duck – start with a whole duck, learn how to break it down, make duck liver parfait, seared duck breast and confit duck leg. Enjoy a duck feast!
Fish – learn how to choose the right fish for the right dish, clean and portion, grilled, “en papilotte” (steam in paper) and the art of smoked fish.
Bread – basic white bread rolls, cape seed loaf, focaccia and ciabatta.
Basic cooking – learn how to make basic bread, cook a roast from scratch, adapt sauces for any dish and master simple dishes.
Courses normally on Saturday mornings, but other dates can be arranged for groups.
