Strawberry salad with goats cheese crouton

A fresh summery salad with a melty goats cheese top.

Ingredients (9)

1 strawberries
1 spinach — baby
1 cup peas — baby
6-12 bread — French loaf
2 goat's milk cheese
DRESSING:
6 chopped
2 Tbs honey
1 Tbs lemon juice
1 Tbs vinegar — red wine

Method:

To make the croutons:
Depending on the size of the French loaf, use either 12 small slices or 6 larger slices and place on a baking tray.
Brush with a little olive oil and place in the oven at 150 °C until light golden.
Take them out and place the goats cheese on top and set aside.
For the dressing:
Chop the mint finely and mix with all the other dressing ingredients. Season with salt and pepper.
For the salad:
Wash the strawberries, cut their tops off and slice in half length ways.
Place the baby spinach on a plate and top with the peas. Scatter the strawberries over the top.
Place the croutons under the grill for about a minute and place on top of the salad.
Drizzle the dressing all over the salad.
