Angel hair pasta with bacon and sage

Ingredients (9)

1 pasta — angel hair
1 bacon — streaky
1 onion
4 garlic — cloves
250 ml wine — white
250 ml cream
1 fresh sage — handful
100 ml canola oil — or vegetable oil
1 butter — a knob

Method:

Finely chop the onion.
Chop the bacon into small blocks.
Crush/grate the garlic.
In a large frying pan, sauté the onion in the butter (on a low/medium heat) until soft and then add the garlic.
Add the bacon and cook for 5 minutes, tossing often.
Add the white wine and cook for a minute or two until the alcohol burns off.
Add the cream. Let it reduce and thicken for about 10 minutes. Chop half of the sage leaves and add to the sauce.
Season with black pepper and salt to taste.
Boil the pasta according to the packet instructions (angel hair cooks very quickly so make sure not to over cook).
In a separate pan, heat the oil on a low heat and fry the remaining sage leaves, when they go transparent, take them out and drain on kitchen towel. They go crispy.
To serve: Place the pasta in a dish and pour over the sauce. Sprinkle the deep fried sage leaves over the top and serve immediately.
