Chicken salad with avocado and strawberries

Ingredients

SALAD DRESSING

fresh strawberries, rinsed and hulled

oil

lemon juice

honey

wholegrain mustard
salt and freshly ground black pepper

mixed lettuce leaves
1

large, ripe avocado, skinned, stoned and sliced
lemon juice

strawberries, rinsed and hulled

cooked chicken breast fillets, sliced into strips

chives, chopped

Method

Purée all the ingredients for the salad dressing in a food processor and chill until needed. Arrange the lettuce leaves on a pretty salad platter. Pour a little lemon juice over the avocado slices and arrange in between the lettuce leaves, along with the strawberries and chicken. Sprinkle with the chives and serve with the salad dressing. Serves 4.
