Strawberry sorbet served on meringues

Ingredients

 
  • 250
    ml
    (1 cup) water
  • Bought meringues
  • 375
    ml
    (1-1/2 cups) sugar
  • 30
    ml
    (2T) lemon juice
  • 500
    g
    strawberries
 

Method

 
1. Pour water into a small saucepan. Add sugar and bring to the boil over a high heat, stirring until sugar dissolves. Boil for one minute.
2. Transfer syrup to large bowl. Chill until syrup is cold (about three hours).
3. Purée strawberries with lemon juice until smooth. Strain in a bowl, reserving one-third of purée. Mix remainder with chilled syrup.
4. Process berry mixture in an ice-cream maker, according to manufacturer's instructions.
5. Transfer sorbet to a container or individual moulds, cover and freeze until firm (about six hours).
6. Serve on meringues.
