Salmon fillets with dill and mustard sauce

Ingredients

smoked salmon fillets

ml

olive oil

ml

balsamic vinegar
1

lemon, juice and rind
15

ml

freshly chopped dill
15

ml

soft brown sugar
salt and freshly ground black pepper
DILL SAUCE
15

ml

white wine vinegar
10

ml

sugar
20

ml

prepared mustard
salt and freshly ground black pepper

ml

olive oil
30

ml

freshly chopped or
10

ml

sun-dried dill

Method

Arrange the salmon fillets in a flat dish. Mix the remaining ingredients except those for the dill sauce and pour over the salmon. Cover and marinate overnight in the fridge. Mix the vinegar and sugar for the sauce and stir until the sugar has dissolved. Add the mustard and salt and pepper. Add small quantities of oil while stirring continuously. Add the dill and mix well. To serve, drain the salmon and arrange on a serving platter. Serve with the sauce. Serves 2-3.
