DRESSING AND MARINADE: Combine the oil, lemon juice, garlic, coriander, chilli, celery and spring onion. Mix seafoods together and pour the dressing over. Leave to marinate for about 1 hour before serving. Wash and drain lettuce, arranging leaves in alternate colours on serving plates. Arrange seafood in centre of each plate and spoon over remaining dressing. Sprinkle coriander over the top.
